Nasi Hujan Panas



Nasi Minyak Hujan Panas (Colourful Rice)

Ingredients:

4 cups Basmati Rice
5 cups water
2 chicken cubes
2 screwpine leaves (pandan)
Colouring red, green and yellow

2 cm piece ginger
2 pcs garlic
1 onion
2 tbsp oil
1 tbsp ghee
3 cm cinnamon stick
3 cardamoms
3 cloves
2 star anise
Fried onions
Raisins

Method:

1. Wash the rice well and soak 10 minutes and drain.
2. Slice ginger, garlic and onion.
3. Heat oil and ghee fry ginger,garlic,onion cinnamon stick, cloves,cardamoms,star anise until fragrant.
4. Add rice and mix well.
5. Add in water, chicken cubes and screpine leaves. Stir well before covering the pan. Cook over a slow flame.
6. When the water has dried up, put colouring at different spots. When the rice is cooked mix all together.
7. Serve garnished with fried onions and raisins.
