Acar Datin Nik



Terima kasih Datin Nik kerana sudi berkongsi resipi acar ni. Memang kena dengan selera saya. Pertama kali buat acar ni saya dah puas hati.Resipi ini ditulis sendiri oleh anak Datin Nik dan diberikan kepada saya 2 minggu sebelum saya berpindah ke Moscow. Terima kasih sekali lagi dan mintak halal ya Datin, saya berkongsi resipi dengan rakan-rakan maya.

Mixed Vegetable Pickles

Ingredients:

10 cucumbers - cut into 3x1.5 size
3 carrots - cut as above
250g cabbage - cut 3cm wide
150g long beans
150g cauli flower - cut into small flowered
200g small onions - quartered
6 pcs red chillies - deseeded and quatered
6 pcs green chillies - as above
10 clove garlic - sliced
2 cups roasted peanut- 1 cup whole and 1 cup pounded coarsely
2 cups roasted sesame seeds
4 cups white vinegar
1 cup cooking oil

4 tbsp chilli powder
2 tbsp tumeric powder
3 tbsp water
combine to make into paste **

1 1/2 tsp salt
1 1/3 cups sugar
1 cup raisin

Method:

1. Boil vinegar
2. Blanch all the vegetables separately for about 1-2 mins. Drain and combine to cool in one container
3. Add sugar to the vegetables and mix well
4. Heat one cup of oil in a frying fanand saute the garlic. Brown till fragrant, remove from pan
5. Then saute the paste** until fragrant
6. Add salt, remove pan from the stove and allow to cool.
7. Mix all the sauted ingredients together with oil, garlic, raisins roasted peanuts and sesame seed and remaining ingredients to the vegetables.
8. Mix well and leave overnight before serving.

Nota: Saya buat acar ini sedikit sahaja. Saya kurangkan sukatan semua bahan2 diatas. Begitu juga gula dan garam ikut kesesuaian citarasa masing2.
